Of course, we made it, so I decided to share it with you!The other day, my 4th grader came home from school with a cranberry bread recipe they had read about in a book. It was the day before Thanksgiving and she wanted to make it for the holiday. Now me, not a baker at all, automatically thought in my head, how am I going to get out of this one? But as she read the ingredients off, I decided we should give it a shot. It sounded pretty simple and we actually had most of the ingredients already. I mean, after all, how could I say no to her? She was so excited about it, I really had no choice. And it actually turned out good! So I decided to share it with you, in case you are looking for a good and easy holiday recipe!

Cranberry Bread Recipe

Ingredients:
2 cups sifted all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter or margarine
1 egg, beaten
1 teaspoon grated orange peel
3/4 cup orange juice
1 1/2 cups light raisins
1 1/2 cups fresh or frozen cranberries, chopped

Directions:
Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel, orange juice all at once; stir just until mixture is evenly moist. Fold in raisins and cranberries.
Spoon into a greased 9x5x3-inch loaf pan. Bake at 350 degrees for 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean. Remove from pan; cool on a wire rack.

If you choose, you may substitute cranberries for the raisins to have an all cranberry bread.

Of course, we made it, so I decided to share it with you!This was an easy recipe that my girls could help me with without making a huge mess. We ended up baking the bread for only 1 hour. It was perfectly done and not dry or crumbly at all. We brought the bread to our families for Thanksgiving and it was a huge hit! It was delicious, not too sweet and it was a light dessert which was perfect after stuffing ourselves at dinner!
